With constraint comes creativity. We wanted to make a Pennsylvania Peach, but the only amaro we had handy -- Foro, a delicious but pungent earthy amaro -- wasn't a perfect fit in the drink. Does that mean it's time to hang up your dancing shoes and go home? No, it means it's time to tinker. Restrain the amaro's influence by reducing it from 3/4 ounce to 1/2, add some aged rum to provide a sweet roundness and reduce the rye accordingly, and voila -- a similar but unique drink that melds summery peach with wintry rum and rye. Nothing ventured, nothing gained.
